Champ (brúitín in Irish) is an Irish dish, created by combining mashed potatoes and chopped spring onions ("scallions") with butter and milk, and optionally, salt and pepper. it's straightforward and cheap to produce. In some areas the dish is additionally known as "poundies."

Champ is analogous to a different Irish dish, colcannon, which uses kale or cabbage in place of scallions.
RECIPE
Ingriedients:
5 ounces milk
8 ounces spring onions, sliced or 8 ounces chives
1 -1 1/2 lb mashed potatoes, made without cream or butter
salt and pepper
1 pinch nutmeg
4 ounces unsalted butter
Directions:
1.Bring the milk to a simmer with the spring onions.
2.Add this to the mashed potatoes and season with salt and pepper.
3.Add half the butter and a pinch of nutmeg and beat well.
4.Spoon the potatoes into a bowl and make a well in the middle.
5.Put the remaining butter in the well and serve.
